All you need is two squirrel, salt, pepper, 2 tbsp. garlic, 2tbsp of brown sugar, 1tsp caraway seeds, 1 bag or 2 cans of kraut. First season the squirrel insides with salt pepper and garlic. Preheat oven to 350. Next pour kraut in a bowl and mix in caraway seeds and brown sugar. Pour half of the kraut in the bottom of a baking dish. Place the squirrels laying sideways in the dish. Pour the remaining kraut over the squirrels. Add 1/4 cup of water an seal with a lid or foil. Bake for 1-1/2 to 2 hours or until tender. Remove squirrel from dish when cooled and strip meat from bones. Replace the shreaded meat back in with the kraut, mix and return to oven to warm. If there is not enough liquid just pour in a little pineapple juice. Any wild taste from the squirrel is mingled with the kraut for a unique flavor. Serve with mashed potatoes and bisquits. Serves 2-3 people. It tasted like the finest pork roast dinner I ever had. You could also substitute rabbit instead and the recipe is easily adaptable for a larger crowd. Enjoy!
