"Pickled Fish Recipes"
Does anyone have any recipes for pickled fish using Walleye or Salmon? Any help would be great.

The posting "Pan Fish Hors d'oevers" has a recipe for pickling fish. You can vary the brine ingredients to suit your individual taste: use a favorite wine instead of water, add more sugar, vary the amounts of "mixed pickling spice". Too much salt will make very salty fish.
Cold brine makes tough meat so I bring mine to a boil then pour it over the meat. This "sets" the protien in the fish and keeps the meat tender. When cooled, it goes into the frig for 24 hours.
When I started experimenting with pickling, Suckers were the meat of choice (easy to get and plentiful - put some in the freezer in the spring and have meat to use for experimenting throughout the year.) After getting the flavor that I wanted, then I started pickling other species.
