I have been wanting to make a big bock beer for some time, but couldn't find a recipe that sounded like the dark heavy beer I wanted.
After looking around a lot I put this brew together. Not exactly a bock, but it should be good. It is a seven gallon batch.
6lb Northern Brewer Munich LME
3lb Laaglander Dark DME
1/2 lb pale malt
1/2 Weyermans Carafu III
!/2 lb cariviennie
4 oz Saaz hops
1 oz Hallertauer hops
1/2 oz cascade hops
Wyeast munich lager yeast
Steep grains at 160 for 45 min, strain out and discard grain
total boil 60 min
add saaz after ten min
add hallertauer after after 30 min
1/2 tsp yeast nutrient with 10 mil left
1/2 oz cacade at end, let sit for ten min
cool to 60 deg F
Pitch yeast
Used aquarium stone and bubbled oxygen for four minutes
ferment for two weeks at about 55 deg F
Rack to secondary and lager at 34deg F for 6 weeks
Prime, bottle, age, etc.
It fermented well, and has been lagering for three weeks now. Had a taste when racking to secondary aid it was real good. Looking forward to the finished product in April or so.
