I just tried a sample of my first batch of smoked sausage.
It came out AWESOME ! I'm amazed at how easy it is to do. This is just a recipe that came out of the Luhr Jensen book that came with my smoker. I'll be experimenting with variations I'm sure but I'm EXTREMELY happy with the results of this batch.

If there's any left by the time it comes up ;), I'll bring some to the Durand Outing. I doubt that's going to happen so I might just have to whip up another batch. :) You probably already saw my other post but the results of my first attempt at venison salami were very good too.

Thanks for the input from my questions I had before I started.

Please post that recipe! We would love to try it. Hopefully in the 10lb range??

My wife and I made a large batch of snack sausage this weekend. 25lbs is about all I can take... Our grinder/stuffer is a LEM manual hand cranked job. My arms are killing me! but it turned out great--just a little on the salty side. but good with beer.

Banditto, here it is. It's only a 5 lb recipe but I'm sure you could double it with no problem. This sounds good. I think I'll have to get another batch going shortly. :)

5 lbs. medium grade ground beef
5 rounded teaspoons Morton Tender Quick Salt
2-1/2 tsp. mustard seed
3 tsp. coarse ground pepper
1-1/2 tsp. garlic powder
1-1/2 tsp. onion powder

Mix all ingredients in large bowl, cover and refrigerate.
Next day, mix thoroughly again and refrigerate. Let set all of the next day (refrigerated). On the fourth day, form into 5 rolls. Place in Little Chief Smoker and smoke for 12 hours, using your choice of Little Chief "Chips-n-Chunks" - about 5 pans.
This sausage forms its own casing.
A note of warning - Use only Tender Quick Salt and as specified; do not reduce the amount or proportion. However, the amounts of spices may be varied tio suit your taste.

This recipe came right out of the Little Chief recipe book that came with the smoker. My smoker is a "Big Chief" so that I have to adjust the smoking time as I believe it gets hotter than the smaller one. It says that if I do a smaller batch it will be done sooner than a "full load" in the smoker. Good luck. This is a very easy recipe and makes a very good sausage. Like I said earlier, I think I'm going to start making another batch very soon. It's great with a good cracker and hunk of sharp cheddar ! MMMMMM I've gotta get moving on this NOW. It takes about 4 days to make and my mouth is already watering. :)

Luhr Jensen also has an excellent recipe book available via mail order. The address is in the book that came with your smoker. The book is only $2. but has a lot of excellent stuff in it.

That is a nice recipe book that they offer by mail. I'm not positive but I think it's the same one that I saw at Dunhams when I bought my last batch of chips. I meant to pick it up but forgot. I think next time I head back there I'll grab one. It had some interesting looking recipies in it. Heck, how can ya go wrong for $2. ;)
