View Full Version : Ice Wine, aka Eiswein

We've been having some fun with wine making at home and our latest challenge would be to try some ice wine. We just tried some in Ontario on our trip to Niagara falls and Niagara on the Lake. This wine has been around for a long time and there is a lot of info out there about ice wines but we are having a difficult time finding a recipe.

Does anyone have any input?

You will need a spot to pick 90 pounds of frozen grapes for one bottle from what I have heard. Very little juice is pressed from each frozen grape. Since this grape is harvested so late in the season the sugar content of the juice is very high, thus making as you know, a VERY SWEET and excellent wine! This is why it generally will run you over $85 for a good bottle. I really don't see how you could do this at home without buying an ice wine kit. Do you have a source for your ice wine grapes?
