We have 2 whole catfish that weighted 6lbs each. Can you reccomend any good recipes?

Never tried catfish in the smoker. Probably, leave them in the freezer, then catch a couple smaller ones and experiment on them. I would start with a basic smoked fish recipe and then adjust the brine/smoke process to suit your taste.
Once you have a recipe that you like, then smoke the big ones.
