Just wondering if anyone has any whitefish recipes that would be kind of low fat (ie low oil, grease, etc.) Anyone have any favorite spices that you would use? I'm thinkin of maybe a cedar or oak planked recipe would be great. If no one does, I'm gonna go with the standard cajun seasoning mix I have, should be good, but just thinking someone might have a better suggestion.

Thanks as always.

Steve

seems like you could use any fish recipe. my favorite way to cook salmon (i don't know if it would work for whitefish) is to fillet it, skin off. i make a tinfoil "skin" - place the fillet on tinfoil that has been pricked with a fork- on skin side and up 1/4" on sides. sprinkle with dill weed, salt and peper, throw on a couple lemon slices (or lemon juice) and some onion, and put on a hot grill for 10 minutes or so (till done). pretty generic recipe, seems like it would work (times vary according to thickness). i hope this helps, even though it's not specifically a whitefish recipe. i'm sure you've seen this one before.

Ok By far white fish is my favorite fish of all time. I never freeze it I eat it the same day or next day so ... heres my favorite for that.

Fried Whitefish
filet and chunk
dip in egg white
coat in white cornmeal
fry in 3/4 vegetable oil 1/4 bluebonnet ( or your fav spread for flavor)
season with oldbay seasoning with light salt
fry till dark yellow
rest on paper towels till dry and eat with a little fresh lemon..
man thats got me drooling allover

now for prior frozen fish

White Fish Marinate

2 cup water
1 c white wine
1 c pinnaple juice
1 c orange juice
1/3 c white sugar
1/3 c non iodized salt
1/2 a onion sliced
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp tabasco sauce
little sliced fresh dill

soak in marinate over night
dry fillets and put on broiler or smoker

pm if you need another real fancy one

hope you enjoy

thanks for the replies guys.

I will try the recipes in the following week or so. got quite a few whitefish in the freezer and refridge right now ready to be taken into my stomach. By far my favorite fish to eat.

Hopefully my buddy in Traverse City will show me how to catch these things one of these days.
