well, i bought one for my dad a couple years ago, so i don't remember everything to look for. the one i bought him had two different pots- 1 large pot with a turkey frying rack, and 1 smaller pot with a basket (you leave the basket in while you cook you fish, vegetables, etc., and then pull out the basket with it's handle). it's nice to have a burner that has a lip that sticks up a little around the perimeter- just a little more secure so your pot doesn't get slid off accidently. they say to use peanut oil, because it has a higher smoke point (it can be brought up to higher temps than vegetable oil, before it starts smoking/burning. you might want to make sure it has thermometer, or get one before you start (the oil has to be at the right temp when you start, or the food will be greasy). i don't remember anything about btu's- obviously the higher the better, though. it's also nice if it has an adjustable burner, rather than one that is either on or off.
i hope this has been some help. i'm not an expert, just trying to help.

I have two turkey friers and one fish frier. One turkey (my second cooker) is stainless and it does a much better job than aluminum keeps a steadier temp and cleans up better. As soon as I can I am gonna get another fish cooker in stainless too for same reason. I looked at wing friers which are cheaper than fish friers and will due fish too. I only use peanut oil or the new cotton/peanut mix due to fire risk.

islaysteelies,
You might want to check Costco for a fryer. I saw one there this weekend that was all stainless, with a 32qt. pot with turkey rack and frying basket, plus a smaller fish frying pot and basket. Even the burner base was stainless. All this was only $75.00. You can't beat that deal anywhere.
Good luck,

30Qt is best and Stainless Steel is best.
Sam's Club has one for $60 in stainless 30qt. All in all its the best deal around.
I have a 28qt aluminum and not as pleased with it as I'd like to be. works good though.
