Way down in the bottom of the freezer I found a Salmon that had been there since last year. With intentions of grilling it, I got it thawed. Freezer burnt. Trimmed it, got back to the good meat and found it was a little mushy. What to do?
Brought a pan of water to a boil. While it was heating, I melted two sticks (1/2 lb) of butter and quartered a large onion.
When the water was hot, I put chunks of Salmon in for only a short time; just long enough to lightly cook the meat. Removed the meat from the water, took out any bones that showed up, and put the meat, along with the melted butter, 1/4 of an onion, and 1 ts garlic powder into a blender and turned it all into a fine paste.
While it was still hot, I lined a bowl with plastic wrap and poured the stuff into it. Covered and put it in the frige. When firmed, it makes an excellent spread for crackers.
