Does anyone have any detailed beaver recipes or any links that I could look at to get more info.? I've been trapping and my grandpa keeps telling me I should cook one up for him, because he ate it when he was a kid. But that was years ago and he does not know how it was prepared. Just trying to use more of what I take from the land and make my grandpa's day.

It's outstanding! Treat it like any roast beef. I prefer to use an oven bag but other techniques would work provided you don't let it dry out while roasting.

We go to a Wild Game Dinner every year. Whenever they can get it the menu included BBQ Beaver. It is very tastey. Here are some recipes:

Roasted Beaver
Sent in by Brandon Mills.
~ 1 whole beaver, cleaned
~ 4 medium potatoes, peeled and sliced
~ 2 onions, chopped
~ favorite seasonings
~ 2 cups water
Liberally season meat inside and out with your favorite seasonings, salt, pepper, seasoning salt, garlic salt, etc.
Place beaver in large roasting pan. Add the potatoes, onions and water.
Cover with lid or foil.
Bake at 375 degrees for 2 1/2 hours or until done.
Remove lid and bake another 5 minutes or so to brown meat and veggies.
Serve and enjoy.
