My wife is quite fond of Jerkie's Jerky Cranberry Turkey.

Having experimented with some of the 30 minute marinades (soaked overnight) on Venison with great results, I was thinking I could apply the same method on a turkey breast.

My only reluctance is temperature. With the venison I use the dehydrator on a 185 degree setting. Would that be enough to cure a bird?

I have never paid much attention to the heat my dehydrator. The salts in the jerk is what really preserves the meat. I have done a lot of turkey breasts into jerky with no problems. I don't waste my good venison or wild turkeys on jerkey as I enjoy the cooked au natural too much. I turned the tempeature up one time and didn't like the taste as well as it was at about 140*.

The bad part is I have not seen turkey breast on sale all fall. I ende up buying a whole turkey just beforee Christmas at a buck a pound less than breasts so I could send a batch to Dutchmans son in the big sand box.

My jerk recipe came from a friend so I mix up my own marinate.
