Anybody got any good squirrel recipes? I'm taking my son out today for his first sqiurrel hunt, and I've never cooked a squirrel.

Ingredients:
2-4 squirrels, 2 full size pie crusts, clear gravy mix, mixed vegetables

Par boil the squirrels until the meat falls off the bones
Make clear gravy per gravy mix instructions
Fill one pie crust with the clear gravy, squirrel meat (separated into smaller pieces) and the mixed vegetables
Cover the filled pie crust with the second pie crust
Place pot pie in oven at 350-400 degrees to bake for 15-20 minutes or until crust is browned

This is a very easy recipe that is awesome. My mother has another squirrel recipe that is to die for. It is B-B-Q Squirrel. I will ask her for it today and post here later.

Good luck. My kids are ready to get back after the squirrels now that bow season is ending today.

I actually cut them in sections, dip in a mixture of egg white and milk, light coat with flour, salt and pepper, pan fry. Depending on the squirrel can be a little tough, but the flavor is great.

Ingredients:

6-8 squirrels cleaned, and parted. (I discard the rib cages when I clean the squirrels)

I can of Grands biscuits...NOT THE FLAKY varietey...I usually use butter milk or butter tasting variety. Although the original works just fine too.

1 beef and 1 chicken boullion cube.

1 can cream of mushroom soup.

Dried minced onions OR 1 small fresh onion diced.

garlic powder to taste

season salt to taste

pepper to taste

Instructioins:

Place the squirrel parts in a slow cooker or crock pot and cover with water. Add the boullion cubes, onion, garlic powder, season salt, and peppper. Cook on high until squirrel starts to flake off the bones easily. With gray squirrels about 4-5 hours. Some fox squirrels will take 5-6 hours.

When squirrel is done take the squirrel out and set it aside to cool. (Usually it's falling apart so much I use a slotted spoon to remove the squirrel.) Pour the broth from the crock pot into a large heavy pan and place over low heat on the stove. You will need to add some water to the broth at this time. Add just enough to make it taste like soup broth. IT will be too salty if you do not do this. Usually 2-3 cups will be enough but it may vary depending on the crock pot and the amount of squirrels covered so you must taste!

Add the cream of mushroom soup and stir in. Once the squirrel has cooled enough to debone it pick all the meat off the bones and add the meat back to the broth. Bring the mixture to a slow boil. Cut the grand biscuits into 1/4s or 1/6s and add to the slow boiling mixture. Reduce the heat so that it just simmers and with a spoon gently dunk all the pieces down into the mixture a couple of times. Now loosely cover the pan and allow to cook for approximately 10 minutes...or until the "dumplings are done". During this 10 minutes gently dunk the dumplings down once or twice. This helps thicken the broth to a more gravy like consistancy.

OPTIONS

Sometimes when the squirrel is about half way done I'll add chopped carrots or diced potatoes for variety. IF your family likes mushrooms you can add a can or two or some sliced fresh mushrooms...we really like this. Another thing I like to do sometimes is when I put the broth on the stove is add a drained can of corn. I'm sure you could add mixed vegies when you put it on the stove or???

Or if you want some delicious fried squirrel try this option.

When the squirrel is almost ready to fall off the bones remove from the crock pot. Then roll them in flour and fry to a golden brown. Remove the squirrel and make pan gravy with the leavings in the pan and use the juice stock from the crock pot for the base. Serve gravy over boiled or mashed tators and prepare to eat too much.

Quick, easy and delicious.

Squirrel is tough because people fry them like chicken. You can't do that,

Squirrel meat is our favorite all time meat and cooked correctly, is falling off the bone tender and the taste is unparralled.

If shot with a shotgun, every BB hole has to be sliced and the finger sized piece of hair taken out.
Wash good and pat dry. DO NOT BOIL. This only cooks out the flavor.

Quarter the squirrel. You'll have 5 pieces of meat. Legs and back.
Coat with flour, salt and pepper to taste and fry at 225 degrees. No hotter or you'll be eating shoe leather. Just hot enough so the grease is bubbling.
Flip only once when the underside starts to brown. It'll take a good 45 minutes before they're done.

Bout a 1/4" of grease. Yes, I cover while frying, then leave the cover off the last 15 minutes.

I can tell you first hand that Englishes' squirrel and dumplings is delicious. I can't make it the he does though. Maybe I'll have to hire him as a chef.:D

Put the whole pan in the oven on 300 and cook for about an hour to an hour and a half depending on how much squirrel you have. Melts in your mouth, works good for rabbit to.

SCOTT!! Just ate the squirrel with your recipe...it was awsome!!

I did one squirrel your way and the other in a traditional cream of machroom. You recipe blew me away! The apples must make the meat less game tasting and tenderized it? I highly reccomend scotts dish!!

sounds excelent. im currently putting together a cook book for michigan squirrel dog assoc. and if you don't mind would like to include that one. we have some dandies going in so far.Ingredients:
