I cold smoked some Salmon this weekend. It turned out pretty good but Damn did it take a long time. Four steps to this process took 38 hours total time from start to finish....Holy Moly

9 hours in brine solution
12 hours cold curing
1 hour drying to form pellicle
16 hours smoking time.

I kept the temp down by smoking all night outside at about 38-45 deg. ambient temp. through the night. I used the Luhr Jensen shavings (dampened) and it seemed to smoke well without developing too much heat.
It came out pretty good. Nice & pink but by the recipe I used (not my usual recipe :rant:)
it was a bit salty for my taste. I think using my usual recipe would have tasted better.

You got that right Dan stick with your normal Recipe. I have had so many people tell me it's the best they ever tasted i would have to agree:D Thanks for the recipe.
