My son shot a nice deer on the youth hunt last night. we are not sure if we are going to get it mounted or not. I typically butcher my own deer but have not done one I am thinking of mounting. I did not cut into the briscut area knowing that much. How would I cape this out the rest of the way as to not mess it up for the taxidermist?

Skin the deer from the back forward. When you get to the front legs cut off the front legs below the knee joint. Now cut up the back of the front legs and right back to the chest cavity. Make no other cuts. Once this is done carefully skin forward as far up the neck as you can get. You can get to the last joint if you try but if you are unsure you can leave a little neck meat in it. Now cut the neck meat carefully, do not cut the hide. You will now have the hide off with the head and little or no neck in it.
