did the annual freezer cleanout along w/ birds i brought back from canada and jerkified about 15lbs of duck in the oven.
turned out great and was super easy.
go to walmart and in the sporting goods section they carry several flavors of jerky cure.... i used both traditional and terryaki.
slice the breasts very thin lengthwise w/ a fillet knife and add to mixing bowl w/ the jerky cure.
i also added 3 other compenants - crushed red pepper to liking. 1 - 2 tbsp of KC masterpiece BBQ seasoning. 1 tsp chile powder.
mix the cure and strips thoroughly with your hands and put in ziplock bags over night.
i did mine in the oven - place strips on racks and set oven to 180-200* and prop the door open w/ wooden spoon. takes about 3-4 hrs.
they turned out EXCELLENT!!!
