I love trying new batter recipies, can anyone give me some of their favorites?

1 cup flour
1tsp baking power
1tsp salt
1/2 tsp pepper
1/2tsp garlic power
1tsp onion power
1/2 tsp ground thyme
1tsp tabasco
9-12 oz beer (flat beer works best)
Mix dry ingredients. Add tabasco and beer. Stir well. Thoroughly dry Walleye fillets on paper towel so batter will stick. Cut fillets into small pieces, dip in batter and deep fry until golden brown.

I use saltine crackers pulverized to a fine grit.
A bit of salt and pepper and a squeeze of lemon.
Simple but good.

Man some spicey walleye with some nice crunchy cracker bites would be awsome cant wait till we open some fish.

dust filets with flour then dip in eggs and roll them in mashed potatoe flakes then pan fry. This is a very tasty and nice looking filet

I like the simple batter of rolling the fillets in stirred eggs and then in Frying Magic. It is light and somewhat chrispy.

I have tried lots of fry recipies and the best I've had is Gary Roach Secret Recipie. He also was Cajun and I don't care for that its just to salty. We have also done vension,goose and grouse in it.The guys I hunt with have an old saying you could roll tree bark in it and it would be good eating. Its so good we sent to the company and got it by the 15lb. bag for our fishing club outing fish fry.

Skunk, you're right on about the flakes! Try soaking more fishy fish like Bass in milk before coating. I forgo the flour and get to the lightly seasoned flakes. The potato seems to absorb the odor and flavor of the fish. Not release it into the house. A big plus for some of the wives.

I have tried several of the commercial batters and found most of them to be good - however, they end up much like the fish fillets that one gets from a fast-food restaurant.
My preference is to rinse my filets, then put them in a bag of flour/seasoning salt mixed. I coat the filets, shake off any excess flour, then cook them in a hot iron skillet (with an olive oil coating on the bottom) on the grill. (I have to use the grill because cooking that hot in the kitchen sets off the smoke alarm.) Using the very hot iron will brown (slightly blacken) the crust of the filet and still keep the inside very moist and flaky.

Dip egg in combination of egg and water. Then dip filets in Fryin Magic. Cook in oil til slightly brown.

Milk, flour, beaten egg, and roll in crushed pretzel crumbs. Deep fry until golden brown.
If that does not do it for you try Golden Dipt brand fish fry batter mix and use beer instead of water. Dip dried fillets in batter and deep fry until golden brown.
Now I wish I had some fillets in the freezer.:cool:

Thin “just add water” pancake batter; hot peanut oil 350 deg F, fry until golden brown, mouth watering.

My best of the batch for walleye..
trim all dark meat and middle bone line from fillets cut into sticks/ bite size chunks..
dip fish into egg White..
then into cornmeal...
sprinkle " Old Bay seasoning and salt to taste... i go med-strong...
fry in veg oil and butter mix
set on paper towels to cool a little
try to get it to the table before its "unlawfully snagged" by family

Here is a batter for you that is not real greasy after deep frying.
first roll in flour
then in a mix of egg and milk
then in finely crushed corn flakes, you can add any kind of seasoning in the corn flakes. I usually put a little bit of seasoning salt or cajon in the flakes
and then fry them until golden.
Of course you have the mushrooms
clams
onion rings
and curly fries.
The indigestion usually goes away after a few hours
good eaten"

This has to be one of the easiest and best beer batter recipes I have come across. Actually melts in your mouth and you can make it as heavy or as thin as you prefer.
1 egg; 1 cup of Bisquick; salt to taste; and as much beer as you find you prefer (thin batter or thicker batter)
Just mix all the above ingrediants in a shallow bowl, mix in your favorite (pickeral) fillets and deep fry in some hot grease.
When company stops by this one can really make the fish stretch.;)

Well 1shot your gonna get your chance tonight. One of these reciepes will be used tonight or maybe a little shore lunch thin cajun batter and one of the above will be used I'm feeling very versitale today. If you and LOngbeard come home from fishing, dinners at 5:30 don't be to late or there won't be much left.:eek:

If you ever get the chance the way my dad pan fry's fish is quite tasty!!!!
Go to the local grocery store and go to the cracker isle. Pick out about 4-6 different style crackers you really enjoy. Does'nt matter what type(wheat,ritz,saltines,oyster,chicken in the basket) you get the picture. Take all purchased crackers home and have your kids have fun (If you have kids) crushing up all the different crackers in a large freezer bag. Whip up a liquid coating of your choice(ie.milk,eggs,etc...) Dip your choice of fillet into the wash then into the bowl of crumbs. Lightly pan fry with butter! I can promise you that the taste is out of this world. I never can stop eating them. Good Luck!
P.S. Use whatever crackers neccessary then store remainder in a tupperware container of some sort for future fish frys!!!!!

Now that those sweet Georgia Vadalia onions are available in the stores........nothing is finer than making homemade onion rings to go along with those beer battered pickeral fillets.
Use the same bisquick beer batter that you use on your walleye fillets and make your onion rings.
Makes a great accompanment with the fish..........the key is to drain your onion rings onto a brown grocery bag to keep them crispier, the same goes with the fish, I am not sure why, but it works so much better than paper towel at wisking away the excess grease and keeping the rings and fillets crispier.
Enjoy, I know my family and friends sure do.......we can not wait until spring and those big sweet onions.
Another way to cook those onions is on the grill......take some brown grocery sacks and cut to fit around your onion, soak in water and wrap around onion, then wrap your tin foil around the water soaked bag, bake on grill like you would a potatoe. Onion will be transparent when done, a little brown is good to. Just cut, butter and salt and pepper, you have died and gone to heaven...
