I will add other animals and "finished" care later.
Waterfowl and upland birds.
Cool as soon as possible.
Dry off excessive blood or water with a towel - paper is fine.
Place it head first into a pair of pantyhose with the wings folded.
If it will be in the freezer for a while, wrap the beak and feet in damp paper towel
Place inside a plastic bag, squeeze out a much air a possible. Repeat.
Refrigerate (if the trip to the taxidermist will be soon) or freeze.
Try to avoid dog mouths and game pouches. These steps will take a few extra moments, make the taxidermists job easier, and produce a better end product.
