I had one squirrel from the MS hunt at Central MI SC this weekend and I wanted it for dinner tonight.
This was real easy, took just a couple minutes to prepare and was ready when I got home.
1 squirrel carcass
1 can Cream of Mushroom soup
3 or 4 cans of water
1 med. Onion - medium to large chop
3 Celery stalks - medium chop
3 Carrots - small chop
1 tsp Salt (I ALWAYS use Kosher salt for cooking-not Iodized)
Pepper or Cayenne or Seasoned Pepper or whatever you like
Your favorite meat seasoning or dry rub.
Put half the chopped onion into the crock pot
Season the squirrel/Rabbit with the rub and place ontop of onions
put in the rest of the chopped veges
add can of soup
add cans of water
season with salt and pepper
Stir. Put on High. Cover. Enjoy 4 to 6 hours later.
