What is the difference between regular old table salt and Kosher or non-iodized salt? Does it have a big impact on the smoking process?

It sure does....... Kosher or non iodized allows a pellicle to form on the meat or fish which helps to grab the smoke and hold it.

My buddy has a small salmon and a steelhead left over from this summer. Gonna give the old smoker its trial voyage.
