Let me return a favor..since I've borrowed recipes and ideas from you folks. I made this dish one evening over the Christmas weekend...the amounts are guessed at but it shouldn't matter too much. Enjoy
1 or more pheasant breasts and legs (split breasts)
Your favorite cooked rice
Frozen morels (preferable) or other mushroom
Flour for gravy preparation
White wine for deglazing pan
I started by pressure cooking the pheasant pieces briefly, there are other methods, the point here is to get them lightly cooked.
Brown the pieces in 3 T good cooking oil after dredging in flour
Fry the mushrooms in the remaining oil after removing the pheasant pieces until browned
Remove the mushrooms and reserve
Deglaze the pan with maybe 1/4 cup wine
Add the stock from the pressure cooker to quantity sufficient for the gravy you need (or other good chicken stock) Reserve enough to stir in sufficient flour to thicken gravy
Bring to a boil and add the water/flour and return to a boil to thicken.
Addd the mushrooms back into the gravy
Place a seving of rice on a plate, a piece of the pheasant, and gravy over all. Whew! I had brussel sprouts with this it made an excellent meal. Hope this works for you. Sorry about the quantities but, hey, if you're in the kitchen then you must already know something; right? Enjoy!
