I found the best jerky screens for making jerky. I always had trouble with smaller peices falling through racks, and not to mention cleaning the racks after making jerky. I found these little
screens at meijer in the bbq grill section. Theyre called Oscarware disposable grill toppers. But with the low heat in making jerky, you can probably get alot of use out of them.Theyre 7"x11", so you can fit three side by side in an oven. And best of all, they only cost $1.99 !!

oncorhynchus,

Thanks for the idea. It is always a problem when small items go into the smoker. Here's another solution - metal window screen. I have used it for holding wet sawdust on charcoal and for small items on the rack.

 if you use screen be sure it is aluminum, stainless, or copper! NEVER use refrigerater racks or coated screens! Zink and cadmium are often used for plating and can cause health problems (heavy metals) when used with a heat source. Enjoy!!!
