A guy I work with I with is a duck hunter. He is going to give me a couple ducks to smoke. I have smoked turkeys, but never ducks. I've never even cleaned a duck. Do I leave the skin on or take it off? He's going to take the guts out for me. I am thinking of taking the skin off and puting some bacon over the ducks or at least one of them. Has anyone ever smoked a duck?
Any tips would be appericated. Thanks!!

I have smoked goose breast before. I skined it then use a whole bottle of teriaki and at least 4 tablespoons of brown sugar. Fill the rest of bowl with water and mix until all sugar is disolved. Soak duck in the brine soulution overnight. Smoke for 3 hours. Enjoy
