View Full Version : Teriyaki Cure for Jerky Question

Hi guys, I've been making jerky for quite a few years, usually pepper blends. I have the texture down to a science, but I'm in need of different flavors. All of my favorite spicy concoctions, don't agree with my old stomach anymore. lol
Do any of you have some recipes for teriyaki jerky, that aren't overpowering?

Do ya want recipes for a jerky shooter, or for whole meat jerky???? I've got both....

Yup, I have others that work really well, but not a flavorful teriyaki.

Ok, here goes;
Teriyaki-Style jerky
5lbs meat cut the way you like
4 tablespoons non-iodized salt
1 tablespoon mortons tender quick salt
1 tablespoon garlic granules-or 5 cloves fresh
1 tablespoon ginger
1 tablespoon yellow mustard seed, ground
1 tablespoon black pepper
1 cup red wine(Boones Farm Strawberry Hill is what I use)
1 cup soy sauce
2 cups corn syrup(white Karo syrup)
1 cup cold water
Add al ingredients, and brine for 24 hours, dran in a colander, but do not pat dry,,, spread on oven racks and turn oven on 200 for 1 hour till tacky. Finish in the smoker with apple or other fruit wood (If ya need apple, call me, I think I have some out back.....)

Its a tenderiser,,,, Shoppers sells it in 1 lb bags(blue) its over by the spices.....

Shoeman I have a great terriaki recipe. I use it to marinade pork, chicken and fish. It is very mild and real easy to make with ingredients we all have around.;)
Adjust volume to amount needed.
1/3 oil
1/3 soy sauce
1/3 whiskey :D
Add some cayenne if heat is desired. You will never buy store marinade again.

Whiskey on meat? Isn't that alcohol abuse?
I tried the original recipe, but it was too strong. I used a prime cut. Maybe I should have reduced the time frame.

Try this simple one. Go to our local Meijer and get a bottle of Lawry's Jamaican jerk marinade. It's located near the BBQ sauces. Just soak the meat overnight and smoke or dehydrate. I have always been a "from scratch" nut, but I guarantee you will like this.

Hey Shoe , it's a blend of sodium nitrite , sugar and salt...
It can be used for hard curing just about any kinda Kritter Protein out there...
You gotta try the Snacky Sausage here...
