View Full Version : Shot my 1st goose Now what do i do with it?

Hello over labor day weekend I was able to shoot my first goose ever and boy are they bigger then ducks. For ducks I usually just let them soak in Itatitlan dressing over night and wrap bacon around them but the goose is alittle bit to big I think. I have been looking around for a simple good recipe but with no luck.

IF anyone out there has a simple recipe that I could use to cook my first goose that would be great..

I have tried grilling them and it just never worked for me. I enjoyed a simple crock pot recipie. I take a few breasts add a can of chicken broth a half can of water a pack of dry onion soup, add some onion, and salt and pepper to taste. Throw potatoes and carrots in if you want. Serve with some rice. Simple and never dries out the meat.

This is what we do with goose meat & also with deer heart:

1 large goose or 2 smaller geese, whole
4 whole cloves of garlic
2 whole onions
2 chopped onions
2 carrots rough chopped
2 celery stalks rough chopped
1 bay leaf
2 cups chicken stock
water
salt & pepper
butter
3-4 cups BBQ sauce (get the good stuff!)

Put the goose/geese in a large pot. Add garlic, whole onions, carrots, celery, bay leaf, and stock. Add enough water to just cover bird(s). Add salt & pepper to taste. Bring to a boil over high heat uncovered then reduce to a simmer and cook covered for 3 hours or until meat starts to fall off bone. Leave bird(s) in covered pot and refrigerate overnight. The next day remove bird(s) from pot and pick off the meat. Discard skin, bones and stuff in pot. Shred the meat. In a large pot sautee the chopped onions in butter until just beginning to color and then add shredded goose meat. Cook until warmed through. Add BBQ sauce. Simmer over low heat until bubbling. Serve over rice or biscuits, or on a bun as a sandwich.

The sandwich option is my favorite :)!

Second that sandwich option just make you stack it!

Like the duck it's great wrapped in bacon. We have just cut the bird into small pieces 1-1 1/2" cubes marinate in Jack Daniels marinade overnight then wrap the small pieces with bacon and throw on grill. Yes, I grill all year just takes longer in the winter!
