my son has just shot his first wild Canada goose -- he butchered it and only brought home the breast, saying that there is no other meat worth eating -- I thought for sure the legs/thighs would have something, and at least a little meat on the wings? am I incorrect? I just don't want him wasting what he hunts. thank you - would also appreciate a direct e-mail.

I only breast them out as well....He did nothing wrong.

I never waste anything. While I have friends who breast out ducks, geese, even turkeys... I'm a dark meat lover who even eats even the legs of a woodcock, small, but tasty. Cover the legs with tin foil, or remove them before the rest of the bird is done, or else they will get dried out. Goose is good medium rare, cook it too long, and you'll regret it. Skinning the entire bird takes only a bit more effort. Plucking is a chore, along with singeing (sp?) the hairs, but that skin has some nice fatty flavor for roasting. Save the feathers and the turkey legs, and pass them on to a Native American you know or take them to a pow wow, they will appreciate them and use them for their regalia. My kids have been asking for some goose...the late season approaches. KaaHuuunk... Nika
