Salsa
6 pounds whole tomatoes-peeled seeded
1 pound onions
1 1/2 cup vinegar
1/2 large red pepper
1 jalepeno pepper
3 teaspoons crushed red pepper flakes
1 tablespoon plus 1 teaspoon salt
1 teaspoon mustard seed or powder
2 teaspoons sugar
2 teaspoons chile powder
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
Chop tomatoes, onions, and peppers. Combine all
ingredients and bring to a boil. Reduce to medium
heat and cook down for about an hour or longer
untill it is very thick. Stir occasionally.
