I was wondering the best way to prepare burbot either fried or baked? It always seem to turn out inedible, being tough and chewy.

The best way to enjoy Burbot (poor mans lobster) is to boil it , and serve it with melted herb butter. Most exellant !!

Caught 4 burbot on lbdn last week. Cut fillets up into chunks and boiled then cooled,Made a sauce of butter and chopped garlic[bought in jar]in cast iron pan then added burbot and heated threw. Only got to taste a few peices as my one son wolfed down the rest.
Try boiling it in 7 up. Then dip in butter, its pretty good that way, in fact you can do that with Pike too.
