After visiting with Shoeman yesterday, I dropped the wife off at Meijers to do the grocery shopping, and stopped by a buddys house. He went to a pheasant preserve yesterday, and just got done cleaning his birds, and was going to make something out of them. His wife was at the table clipping coupons and came across this recipe, and told him to try it with the pheasant.
We both read it and thought it was different, so he decided to try it.
Heres the recipe, then my comments.....
Chicken and Pierogy Pot Pie
10oz Boneless, skinless chicken thighs, cut in chunks(we used about 2 lbs pheasant breasts, cut in chunks)
2 teaspoons oil
1 cup sliced carrots(we used about 2 cups)
1/2 cup chopped onion(we used about 1 cup)
1/2 cup sliced celery(we didnt have any)
1/4 teaspoon dried thyme(we didnt measure)
1 package Mrs. T's Potato & Cheddar Pierogies(we used 1 package Mini Pierogies-Potato & Cheddar)
2/3 cup prepared chicken gravey(we used 2 pkgs of the powdered chicken gravy combined with 2 cups water)
(we also used 2 small cans mushrooms)
Large skillet heat 1 teaspoon oil over medium high heat, brown chicken (pheasant) on all sides, remove to plate.
Add more oil, and add carrots, onions and celery, cook and stir until vegetables are almost tender.
Return chicken (pheasant) to pan add 3/4 cup water and thyme. Cover and simmer until vegetables are tender(about 10 minutes)
Cook pierogies in boiling water for 5 minutes, then drain.
Stir gravy into chicken(pheasant) mixture, (we raised the temp, and stirred, for our gravy to thicken, then we added our mushrooms) Gently stir in pierogies, and heat until hot....
Spoon into bowls, and serve with some good bread.
I was totally surprised, this stuff was FANTASTIC!!!!! I think it will even be good with chicken.
For you guys who got lucky enough to get some birds this year(Shoeman) you HAVE to try this!!!!!!! About twice a year, I come across a recipe that really blows me away, this is one of them!!!!!
