I bought a used bow this summer, a Proline centerfire , and I noticed something a little weird the other day when shooting. When I am at full draw, relaxed, aiming, bow is resting in left hand (not gripping) it seems the bow is twisted in my hand and the string is completely off center alignment with my rest. It is so far off that i have to think the string is hitting my cable guard upon release. I can correct it by actually gripping and twisting the bow with my left had while aiming, but it is uncomfortable and I sure don't want to worry about this when hunting !
Anyone have any suggestions to correct this ? Is it my shooting form ?

I'm going to assume that you are judging this by the way the string lines up with the idler wheel in the top limb. This is really just an illusion caused by the twisting of the limb. To correct this is very easy. Since you've mentioned you're afraid it's going to hit the cable guard, I'm going to suggest putting about 5-6 twists, possibly more, in the right side cable that attaches to the right side of the bow on the top limb. JUST THE RIGHT SIDE. This possibly could be too many twists or not enough, but it's a good starting point judging by the severity which you have described. This is a trial and error method, just keep twisting till the lean is no longer noticeable.

I, and someone standing behind me at full draw, are judging this by looking at the alignment of the arrow in comparison to the rest and the cable guard. At full draw we can see the arrow is pointing to the left, it is definitley not parrallel to the cable guard.

Hardly ever will an arrow actually run parallel with the cable guard rod when at full draw. Most rods experience stress from the cables which will bull them in towards the arrow, and some companies actually angle their cable guards out away from the bow riser itself.
